Serving suggestion: Best enjoyed well chilled, diluted with 5 to 7 parts cold water to taste. Pour 4 cl of pastis into a glass, add cold water then a few ice cubes. Take the time to appreciate the anise and herbal notes before savouring slowly, ideally as an aperitif and in good company.

HISTORY

Maison Louis Roque is based in Souillac and bears the name of its eponymous founder. Heir to a unique savoir-faire, the house has always known that the true aperitif of the South-West deserved a home worthy of its name. A tribute to the culture of the aperitif, Lot-style.

FIRST IMPRESSIONS

When this pastis is served, the first thing that catches the eye is its clear, crystalline colour. Then, as cold water and ice cubes are added, the magic unfolds: the liquid slowly turns cloudy to reveal an opaque milky veil, the iconic signature of great anise spirits. Pearlescent blue-white reflections illuminate the glass, giving rise to a soft, almost luminous hue. Just by looking at it, you can already sense the freshness, conviviality and Mediterranean character that will come through on the palate.

AROMATIC PROFILE

The first nose immediately reveals the full freshness of the anise notes: star anise, badiane and fresh fennel express themselves with elegance and intensity. Then, as it breathes, the aromatic heart deepens with black liquorice, peppermint and garrigue herbs, bringing a sensation that is at once fresh, herbal and Mediterranean. Finally, the base reveals more discreet and complex notes of coriander, secret aromatic plants and a subtle herbal touch that extends the olfactory experience with finesse and authenticity.

TASTING

From the very first notes on the palate, the aromatic intensity of anise and liquorice expresses itself with directness and elegance. The menthol freshness then balances the whole, instantly evoking summer aperitifs and the warm atmosphere of the Midi. The palate reveals a beautiful roundness and an ample texture, supported by a slight herbal bitterness that brings length and character to the tasting. The finish, soft and persistent, allows delicate notes of anise and fresh fennel to linger. Best enjoyed diluted with five parts cold water and a few ice cubes, or as a long drink cocktail for a more contemporary and refreshing experience.
