Selection: fruits
and encounters

It all begins with a fruit or a plant.
Plum, of course, but also pear, mint, anise or gentian. Each eau-de-vie from Maison Louis Roque is born from an encounter between earth, hand and eye.
In the early hours of the day, in the finest orchards of France, passionate farmers assess the fruit's ripeness as one might await a first date. Sugar, acidity, flesh: everything must be perfect.

These independent producers cultivate their orchards using organic farming methods. When the fruit reaches its peak, it is picked without delay, fermented, and then carefully distilled. The precious distillates then make their way to our cellars in Souillac.

The Art of
Blending

As early as 1905, Louis Roque had the intuition that an eau-de-vie could transcend its nature as mere alcohol to become the pure expression of fruit and terroir. He chose not only to distill, but also to blend distillates to magnify them and achieve a unique result.

Blending the finest eaux-de-vie in just the right proportions remains the House's signature.
In Souillac, we measure, we compare, we hesitate, we begin again. We pursue the thrill of perfect balance.

Aging, or
a Taste for the long term

Each drop of Vieille Prune owes its character to time. After blending, the eaux-de-vie rest for years in our cellars, where the wood softens and rounds the edges. Light, temperature, humidity: everything contributes to their balance. Here, time is an ally.

Our cellar, composed of small oak casks mingling young and aged wood, allows the spirit to breathe slowly. The cellar masters, heirs to a discreet craft, monitor each cask, listening to the dialogue between fruit and wood.

Over the years, the eau-de-vie takes on an amber hue, enriched with notes of ripe fruit, vanilla, and spices. It becomes smoother, deeper, more refined. The patience of time gives each cuvée its soul and distinctive character.

Each bottle passes through hands as a singular object, never quite like the one before. Nothing is automatic, nothing is left to chance.

In Souillac, we bottle, we wax each cork, we label by hand...
Gestures repeated for decades, precise as a familiar score, learned over time, in the silence of the workshops.
